If you love carrot cake, these cookies are for you. They blew up on social media, and one bite explains why.
Gentle carrot sweetness, warm cinnamon, ginger, and a pinch of nutmeg. All the flavors of carrot cake in a soft, chewy cookie.
The surprise is inside. Every cookie hides a creamy cream cheese center, just like the frosting on the cake.
They look simple but taste like they came from a bakery. I make them for hosting, for a family dessert, or just with coffee.
My tip: squeeze the grated carrot really well. Excess liquid makes the dough wet and the cookies spread.
And freeze the filling first. Frozen balls of cream cheese are much easier to wrap in dough.
Beat cream cheese, sugar, and vanilla, scoop into small mounds, and freeze for 30 minutes. Make a spiced dough with butter, brown and white sugar, egg, vanilla, finely grated and well-squeezed carrot, flour, baking soda, salt, cinnamon, ginger, and nutmeg. Wrap each frozen filling ball in about 1.5 oz (43 g) of dough and bake at 350°F (175°C) for 12–14 minutes.

Cream Cheese Stuffed Carrot Cake Cookies
Ingredients
Method
- Beat the cream cheese, sugar, and vanilla until creamy.
- Use a teaspoon to drop small mounds onto a sheet of parchment paper. Freeze for 30 minutes.
- Grate the carrot on the fine side of a box grater and measure out ½ cup (56 g).
- Spread it on a plate lined with paper towels and press gently to squeeze out as much liquid as possible. Repeat twice more with fresh paper towels.
- In a bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla, then the carrot, and mix.
- Add the flour, baking soda, salt, and spices and mix just until the dough comes together.
- Weigh about 1.5 oz (43 g) of dough per cookie. Flatten it slightly, place a frozen filling ball in the center, wrap the dough around it, and roll into a smooth ball.
- Arrange on a parchment-lined baking sheet, leaving space between them.
- Bake in an oven preheated to 350°F (175°C) for 12–14 minutes. No longer!
- Cool for a few minutes on the baking sheet, then move to a wire rack.
Notes
- Squeezing the carrot three times sounds fussy, but it’s what keeps the cookies soft instead of soggy.
- Keep the filling frozen until the moment you wrap it. It’s much easier to seal.
- Pull the cookies at 12–14 minutes even if they look soft. They firm up as they cool.
- Light brown sugar → dark brown sugar (slightly deeper molasses flavor).
- Use regular full-fat brick cream cheese, not whipped, so the filling holds its shape.
