Prep Time 30 minutes
Cook Time 25 minutes
Total Time 3 hours 5 minutes
Servings: 1 large pull-apart challah
Course: Breads & Rolls
Cuisine: Israeli, Jewish

Ingredients

Dough
  • 4 cups (500 g) all-purpose flour, sifted
  • 1½ teaspoons instant yeast
  • ¼ cup (50 g) sugar
  • 1 teaspoon (5 g) salt
  • 1 large egg
  • 2 tablespoons (30 ml) neutral oil, such as canola
  • 1 cup (240 ml) lukewarm water, as needed
Topping
  • 1 egg yolk mixed with 1 tablespoon water
  • Sesame seeds or poppy seeds, to taste

Method

  1. In the bowl of a stand mixer fitted with the dough hook, mix the flour and yeast. Add the sugar, egg, and oil.
  2. Start kneading and add the water gradually.
  3. After 1 minute, add the salt. Keep kneading for about 10 minutes, until the dough is soft and elastic.
  4. Lightly oil the dough, place it in a covered bowl, and let rise for 1–1½ hours, until doubled in size.
  5. Divide the dough into 2 balls. Roll each one into a square about ½ inch (1.5 cm) thick.
  6. Cut into long, narrow triangles. Roll each triangle up from the wide base into a small croissant.
  7. Arrange the croissants on a parchment-lined baking sheet, snug against each other, so they join into one challah in the oven. Cover and let rise for about 40 minutes.
  8. Brush with the egg yolk mixture and sprinkle with sesame or poppy seeds.
  9. Bake in an oven preheated to 340–350°F (170–180°C) for 20–25 minutes, until the challah is golden and shiny.
  10. As soon as it comes out of the oven, cover it with a clean kitchen towel to keep it soft.

Notes

Tips for a soft, shiny challah
  • Add the water gradually. You may not need all of it to get a soft, elastic dough.
  • Place the croissants close together. If they're spaced apart, they'll bake as separate rolls instead of one challah.
  • Covering the hot challah with a towel traps the steam and keeps the crust soft.
Substitutions
  • Neutral oil → any mild oil you like, such as sunflower or avocado.
  • Sesame or poppy seeds → leave plain, or mix both.
